Thai Peanut Lettuce Boats

INGREDIENTS


For the Sauce:

  • 2 Table Spoons of Good Life Creamy peanut butter

  • 1 Cup Thai Kitchen Sweet Chili Sauce

  • 1 Table Spoon of Red Pepper Flakes

  • Shredded Ginger

  • 2 Table Spoons of Olive Oil

  • Pinch of Garlic


For the filling:

  • 1 Organic Green Onion diced

  • Half of a Organic red cabbage

  • Shredded Organic Carrots

  • 1 Medium Organic Onion

  • 2 lbs of Just Bare Chicken Breast

  • 1 Stalk of Organic Romaine Lettuce or Bib Lettuce


Directions:


Pour Sweet Chili Sauce, peanut butter, red pepper flakes, shredded ginger and garlic seasoning into a separate bowl and set aside.


In a large skillet heat up to medium heat and pour in olive oil. Season your chicken with a pinch of garlic powder and keep in pan till thoroughly cooked. Remove chicken and slice into small shreds. Add chicken back to pan and add your “filling” ingredients, saute till tender. Add sauce and reduce to simmer for 10 minutes. Scoop filling into your Romaine Boats! Enjoy!


Hot tip: To spice this recipe up add cilantro, cheese and sour cream with avocado and fresh peanuts!
